Choose reusable cloths over paper towels. For dinner napkins have ones that can be reused.
- Purchase toilet paper that ensures that the product comes either recycled or from a sustainable forest.
- Reduce electricity usage by plugging all electrical appliances into a power bar so that when leaving the house you can just flick a switch and it will turn off. For example you can plug your t.v, dvd player, lamps and stereo in. Even though certain appliances may be off, it may still be using up electricity!

March Recipe – Irish Stew
The month of March we celebrate St. Patrick’s day and this quintessential Irish dish. There are many ways to make Irish stew, but most agree it has lamb, onions and potatoes. Here is my version of this Irish favorite.
SERVES 4 - 6
*Lamb bone – optional*
1 lb lamb shoulder, cut into pieces
4 large potatoes, peeled and cut into 6 or 8 pieces each
2 medium onions, chopped
3 large carrots, chopped into rounds
2 stalks of celery chopped into pieces
2 cups water
1 cup vegetable stock
2 Tablespoons of pearl barley
2 Bay leaves
1 sprig of fresh Thyme or 1 teaspoon of dried
1 tablespoon of butter
Handful of chopped fresh parsley
Sea salt & pepper to taste
Preheat oven to 375 F. You will need large casserole dish with a tight fitting lid.
*Using the lamb bone as well as the meat adds flavor, but you may have to remove some of the fat it produces. Place the ham bone in a stock pot and add water, bring to a boil and turn to low and simmer while you prepare the other ingredients. Skip this step if you don’t use the bone.
Melt butter over medium heat in frying pan and add the lamb to lightly brown each piece turning once (4-5 minutes). Add the onions and cook for another two minutes, just until they become soft and mix with the meat for taste. Transfer to the casserole dish. Add the lamb bone/water that has been simmering, the vegetable stock, pearl barley, thyme and bay leaves. Put the lid on the casserole dish and place in the oven to cook while you chop the other ingredients. Once you have the potatoes, carrots and celery chopped, remove the casserole dish from the oven and add the potatoes, carrots, and celery and stir. Return casserole to the oven and cook for about 40 minutes longer (until the potatoes are done). Take casserole out of the oven and remove ham bone, bay leaves and thyme sprig. Let stand for ten minutes and skim off any fat if needed. Stir in parsely and ladle into bowls. Serve with fresh whole grain bread or buns and a green salad.

March Birthstone – Aquamarine
Derived from the Roman word “Aqua” meaning water and “marine” meaning sea, this pale blue gemstone resembles the color of seawater. The ancient Romans believed this gemstone was sacred to the God of the Sea, Neptune. Early sailors wore aquamarine talismans as protection against dangers of the sea.
The Aquamarine is a member of the beryl family, a mineral that crystallizes within large grained igneous rocks on the earth’s crust. Its color varies from blue-green to light sky blue. It is a relatively abundant gem with the largest deposits in Brazil, but can also be found in China, India, Australia, Africa and the United States. Unlike other gems, the majority of Aquamarines are flawless.
Due to its association with the sea, Aquamarine is said to be particularly powerful when immersed in water. It is thought to have great healing powers and said to protect its wearers from illnesses of the throat, liver, stomach, mouth and throat. Aquamarines were also used in ancient times to reverse poisoning and aid in fortune telling.
Today, Aquamarine is said to symbolize happiness and understanding.
